I have never played the PC version of minecraft, but I brought the X360 release when it came out. I have quite a large mansion, auto-sapling, auto-reed, auto-cacti and a normal wheat farm. I have a large mine and a lot of diamond etc...
I have a squid Spawner (accidental) in my water spring. From the clouds (upside down pyramid with waterfalls)
I have a roller coaster and a minecraft track around the world.
I have a mob Spawner, over 20 stories high, gets me a stack of 64 of everything every ten minutes (there is a skeleton Spawner top floor)
Just wondering what else to build (NOT a cobblestone generator)
Its really easy, all you need it a bucket of lava, 4 buckets of water,11(maybe 12) of any material, and redstone(how much redstone you have = number of obsidian blocks)
I don't know how to explain it easily on the forums, go on youtube and search obsidian generator.
I'll put up a picture of mine incase you're curious.
Depending on if you intend to make it perfectly scaled it could take some work, I hope you like sheep hunting for hours on end. Oh, and bonemeal, you'll want that too.

Build several cities and connect them with a railway.
Build an underground tree farm.
Mob farm.
Creeper statue from wool.
A tower going to the height limit.
A redstone powered minecart storage system.
Other redstone devices for you to invent.
A monument made of valuables. ( Iron block, Wool blocks, ect)
An arena if you play with friends.
A large warehouse.
The list goes on!
