So i built my house and farms on a sandy beach. I have self expanded it a couple of times to fit a wheat farm, sugar can farm, mine and a large brick house. My question is what's a fast way to fill in the large body of water that i have left? I started diving down and using cobblestone since i am tired of messing up the scenery. But can there be a faster way of doing this?

If you're planning on leaving an empty hole where the water was, the best way to do it is place 2 layers of cobblestone or dirt and sand for all other layers. Once the water is gone, go down to the first cobblestone layer, break the stone, place a torch on the ground where the stone was and then break the 2nd layer of stone. The sand will fall (due to gravity), it the torch, and burn up. That is the most efficient way that I know of for removing all of the water.

I typically just make hovering landmasses, preferably w/ dirt. Dirt is easy to break, but simple to put up and defies gravity (unlike sand). I know some people go all out and cover water up with lava to create obsidian flooring, but...that doesn't even sound like a good idea. Just use the ol' fashion crouching and pasting dirt, little by little.
