Love hiding chests in underwater rooms. just dig a hole near the shoreline a few blocks deep and add a sign near the top.
I do something similar, I have a chest hidden in a room that I built by digging through an underground lake and then hollowing out the wall. I built a lava pool over the room using smooth stone, and at the layer where lava pools are a common sight no less, so people can't accidentally dig into it (and anyone who gets the idea of graveling out the lava will only encounter a boring ol floor), and I carefully measured the room so that I could place a torch far enough back that mobs won't spawn in there (they won't spawn in water and the parts of the room that are dry are adequately lit), but you can't see the light from above water. The hole is also well disguised, and I also dug out a bunch of shallow holes around the lake, as well as little inlets and stuff, to misguide people.
It's not really a hope-nobody-finds-it hiding place though. I have a bunch of goodies in it, and once I get a Gold subscription, I'll let people into my world, and anyone who explores enough will be rewarded.
I'm also fond of hiding chests in tree trunks behind leaves, and the ol' painting trick, but since everyone is getting wise to that trick, I may stop doing that so much.
