I have a seed for you. Lots of open plains, but it's a little bit hilly. It has a glitched high cactus on it and a mob spawner near the surface.

Think it's lowercase. Pretty sure.
There's one I heard of, Turnofthetides
Not sure if the first t is supposed to be capital or not so try turnofthetides and Turnofthetides
That one has some pretty serious mounds down the southern and western portions of the map. I built my first city on the center of turnofthetides, but it was only 205x90 at the time. I am not sure if my next metropolis, which is going to be 632x632, will fit in with only a lot of terraforming. Anyone else have some even flatter seeds? (yeah, now I am taking over this thread)
