Say that soon 4J Studios will increase the world size from 1000x1000 to 2000x2000 blocks, will this change on my world? Same thing with Servers that may be added to the Xbox, will I be able to transfer my already created map to a server? I also heard that Cobblestone will look updated, will that change my Cobblestone on my map?

Updates usually affect unexplored areas of the map so that's probably where you found your Clay. As for the map size and servers that's not really confirmed yet so no one knows. FInally if the texture of Cobblestone changes it will change the Cobblestone on your map.

If there are unexplored parts on your map then clay may spawn there. also if cobblestone is changed entirely all cobblestone changes.

It was possible to find clay in a pre-bug patch world after said patch was applied. However, since clay has certain spawning criteria in the generation code, it isn't guaranteed to spawn in unexplored areas. When 1.8.2 comes out, if you have unexplored areas of a map, Ravins, Mineshafts, and NPC Villages should pawn in those areas.
