I have a small mushroom farm that is frustrating me. The red mushrooms are growing fine but the brown just won't grow.
I have tried multiple different methods. On cobble, on stone, on dirt. No light, some light.
Any suggestions?

Your red mushrooms are growing then the brown should to. Mushrooms randomly spread when they do an update tick but the chance is fairly small. You can either plant more or be patient.
I looked at a few of your videos. Based on what I saw in part 42, I think your set-up is ok, and that you just need to be patient. My understanding (I could be wrong) is that red and brown mushrooms behave the same in farms, won't grow if you're too far away, and won't grow while you're asleep.
Even if you're awake and close, they take their time. It's best to forget about them while you work on a close-by project for a day or two, and then check back. If you've got just one brown mushroom, you'll be disappointed if you're checking for brown mushroom #2 multiple times a day. If you've got eight (eight isn't essential, but it's ideal) empty blocks around it and a low light level, it should spread eventually.
