My friends favorite item is dirt so whenever he gets a peice he throws a diamond and be's like, " SCREW DA DIAMOND I HAVE DIRT!'
Well, I'd throw the dirt down if it's filling my inventory. Otherwise, I keep it
i use my dirt mainly to create sky farms and sky forests. sometimes i create biodomes (small island floating in the sky sorrounded by glass). but i need it mostly for scaffollding and leveling out the ground to create town borders.
I use dirt to build animal, wheat, or grass farms. Or a man made island in the middle of a lake (which I did for my house)

That's very nice I did something similar but not quite as nice nor done.
I usually keep my dirt in a chest until I need it for scaffolding. Otherwise I use it to fill in chunks of ground creepers tore up when they catch me by surprise near my developed areas.
I use my dirt for terraforming. If there's a cave entrance where I don't want it, it's filled in. If I need more flat land, I'll dig when I want it lower and build when I want it higher. Im not a big fan of hills where I build stuff. On PC I took weeks flattening and filling in a 150x300 plot of land for a city. Never under estimate the power of dirt. As a common resource it can be one of the useful things you'll ever use.

Dirt is useful for landscaping. There's nothing worse (to me) than seeing gravel or stone exposed at the surface. Those always get buried by dirt, and I create plains and rolling hills and stuff with my extra dirt. If I need it, I know where I put it.
Gravel is saved in a chest for clearing lava lakes, which I do when I'm digging my perimeter tunnel down at bedrock. All the way around the map, 4 km total, give or take. A lot of gravel comes in real handy. If there's lava at the edge of the map I use glass blocks to hold it back. Looks cool too.
Cobblestone is used to build my elevated railway which is also going to be a 4 km loop around the map along with spokes to/from the center of the map where my base is.
Sand is used for platforms and scaffolding and such when building things like the elevated rail. Easy to build up and tear down. Also make glass from excess sand of course. I build railway stations with a lot of glass.
I use it for terraforming mostly. Extending natural overhangs to accommodate larger structures, farms, scaffolding to build with, pillars to gauge location at night if I forget....the uses are endless really. Since all plant life needs it to live, its pretty much a MUST keep for anyone trying to create a natural look in an environment not already in possession of such. You could, by way of example, place a single block, or maybe two, in a open air strip mine. Then plant a tree or two and use bonemeal to BLAMO it up. Suddenly, your scar in the earth is a functioning secret garden. You could even place another block of dirt on those trees and do it again until you have tree growth all the way up your mine shaft. Then build an awesome rollercoaster to go down it, all scenic like. When powered lighting comes, you could even wire redstone to a few choice detector rails and place the lights behind choice waterfalls to create a sprawling cart ride with pulsing lighted water.

Thanks everyone for all the replies! You have given me some great ideas just by asking this question, and it is very obvious I am not playing enough Minecraft right now.
I use dirt to box friends in when they are /afk, LOL, I excavate quite a bit, so I use it to level out my site, build out of caves, scaffolding, and to quickly seal off caves.
I always save it up so I can flatten out large parts of land for building. Unlike other people, I use wool when building scaffolding. I personally think it breaks quicker when you're removing it. : /
