It would be more convenient for me to play minecraft on the Xbox (more time playing it, smother play etc.), but its just so outdated and not supported by key features i love like mods available on the PC. The online play is a lot better in my opinion using servers, and you can play with more people and play different kinds of games! If the xbox version eventually gets to 1.2.5 or whatever the current version would be, i would probably get that version. I dont have any version of minecraft, but have played both equally long.
The xbox version will continue to get updates, in fact we're looking to be getting one in July to 1.7.3.
As for mods, I'm not sure if we've heard anything definitive on that matter, but MAY show up as DLC.
Ultimately the decision is up to you.
I got bored of the PC version last year around 1.7 and stopped playing it, as did the kids. Now we have gone "all-in" on the xbox version. It's actually triggered a lot of interest in the 1.2 PC version as a result and I landed a VM to run the house Minecraft server.
I MUCH prefer the xbox version. It gets more members of the family engaged, and the kids friends come over often to play split-screen.
From what I heard, there is some doubt that we will see mods and texture packs, mainly because they are user created and would require "user permission". According to the Official Minecraft website, "Any tools you write for the game from scratch belongs to you". The way I read this is that if you make a mod for the game you are the owner of that mod. Of course you can't sell the mod. This means for a mod to come from the pc to the xbox it would require permission from the owner of the mod, but it doesn't necessarily mean that all mods taken from the pc would require payment to the modder. Though that also means that the modder can refuse to allow use of the mod in the xbla minecraft. Same would also go for texture packs. This may change however(though its unlikely), due to the fact that the tos is "subject to change".
With all that said I can say that we may see mods in the future. It is not impossible. There are 3 ways this can happen: The mod is paid for by 4J studios to the modder and is distrubuted as DLC(most likely not free); The mod is given to 4J studios by the modder(most likely means free mod); or the mod is made by 4J studios(could be free or paid DLC). In the first 2, 4J would have to make contact with the modder in order to sign some sort of agreement to release the mod. Also, I believe the mod would have to go to Mojang for approval, since it is their game they have final say about what goes into the game, even if 4J studios is doing the porting.
Do not look forward to any mods or texture packs anytime soon, the people at 4J studios top priority I believe is to get the game up to date with the PC. I predict that we won't see mods for probably another year. As for texture packs, they should be easy to make and release, but probably won't see those until 1.8 is released.

xbox version is good for those who want to play with their friends fast and easy and just there friends. PC is for everyone who wants to play on a big server and use mods/texture packs and the updated game. I personally like PC better, but I own x360 version as well.
I prefer my PC version. I wish more of my friends had PC rather than Xbox. I think you will see more people with Xbox since it's more common for the gaming ethic? I'm not sure if that's a fact for most. But in my area not a lot of people have fancy gaming PCs. Bleh :3
