Okay, a friend and I have a really cool server that we've been working on, and we have run out of ideas on what to build.. we have already made:
Nether Mansion
Skyboat
Pirate Ship
Both have mansions
monster grinder
egg farm
wheat farm
cactus farm
sugar cane farm
Lighthouse
An idea a came up with like 2 days ago was building a similar structure as the Biosphere 2 project in the 90s. replicate different biomes.
that's going to be my next project at least
You can make a rainbow that goes from one end of the world to the other and have chests with treasures at the end, a rollercoaster, a statue of you favorite wolf..

A roller coaster! You can't call yourself a Minecraftian (Did I spell that right?) unless you build one!
Try replicating structures from video games. Ex: Rapture from Bioshock, Willamette Mall from Dead Rising, Tallon Overworld from Metroid Prime, the Imperial City from Elder Scrolls 4: Oblivion, Scarlet Devil Manor from Embodiment of Scarlet Devil, those are just a few examples of stuff you can try recreating. Doesn't matter if someone beat you to making it, just see if you can make it just as good.
You could build actual things in real life. Such as the Empire State Building or a Mayan temple or something. Even the Statue of Liberty would be something build able.

You can ALWAYS make more elaborate things.
For example, I always start off with a crafting room. Chests, crafting, furnace.
Eventually this will be broken down into
A furnace room (with fuel, and furnaces ONLY)
A bank/storage room
A crafting room (typically second floor/other part of bank)
it's EXTREMELY rewarding to give each of these things elaborate entrances, exits, escape tunnels, secret passages (if you can use pistons, you can literally make a hallway that has a hidden switch that opens HUGE gateways.
I always enjoy making piston farms.
Basically you just set rows of pistons along rows of plants, and get a moving current going, have all the currents meet up in one spot - so when you flick a switch, all the foot is harvested - and follows your river to the same place for quick pickup.

Oh, and if I wanted to build a scifi related structure, I'd build the Enterprise. XD
But i was thinking of more practical structuress
Build a 25x25 quarry to bedrock.
From bedrock level and up, build a tower that reaches as far as possible into the sky.
Then blow it up
