I posted about this in the bugs section. For some reason it will stop saving to your Xbox hard drive after a while. I found a way around this frustration by saving my game to a USB drive. After saving my game to a USB, my game started saving after every time I saved it.
I hope this helps as a lot of people are having this problem.

That is a lot of data. I don't know if they prepared to have somebody make that big of a map so soon.
