Just the basic stuff. Doorbells, rail systems, traps, etc. Can't really do much without pistons. I was thinking about connecting a bunch of noteblocks to a pressure plate and making a short 16 bar song out of it. Could probably build a club and throw that underneath it.
I made a water lock for my houses front door considering its made of obsidian. You throw an object into a stream of water which floats down and hits a pressure plate, connected via redstone underneath a iron door.

I haven't bothered with any large undertakings on the Xbox version. I made an alternating door to help my mob trap shuffle items out of it. I tried working with BUDS, but it's too glitchy.
Other than that, generic stuff. Although, this one time I ran ahead of a buddy into a mine and used Noteblocks to play a 2-note tune that sounded a bit like the Jaws theme. My buddy wigged out - he thought there was something chasing him that caused the game music to do that.....

I am buliding a computer with redstone. It takes SO long to get the redstone when you run out, but if it were creative mode, I would have it done 3 times over by now.

I feel ya bro, haha, I've made a clock but the display is horrible in my opinion w/o pistons. only really awesome thing ive made with redstone is that when u step on a pressure plate, a alarm made of note blocks and redstone torches (that flicker on and off) gets activated, and six arrow dispensers that I have rigged to go off like a machine gun start reaking havoc on anyone who wants to steal my stuff.
