There's a current issue with achievements not unlocking. For many people, it seems to be caused by a splitscreen parnter getting the achievement first. This issue has caused me to be unable to get "Cow Tipper". Now, we're all assuming that a future update will fix this achievement issue. But can we be sure of that? It's not listed in the planned updates. The only updates we know for sure are coming are most of the ones that were already released for the PC version. Nobody involved in the game development itself has come forward to talk about bugs that'll be fixed.
Don't get me wrong, I assume that they will fix the bug eventually. It's happened to a lot of people, and I doubt they'd just ignore it. BUT, on the other hand, Microsoft has the power to fix achievement issues manually through Xbox Live. I've reported achievements not popping in the past, and they've always done some voodoo for me to make it happen and fix the problem.
So, should I call Microsoft and just have them fix the issue while it's still early on? Or should I bet all my chips on an update that's likely to come and fix the issue, but has a chance (however small) of not coming?
Here is a fix for those of you plagued with not getting achievements in Minecraft specifically because you played splitscreen with someone who unlocked the achievement first. Using the fairly commonly known USB trick, you can fix the problem by resetting your Minecraft stats. Here's how:
1. Put your GamerTag/Profile on a USB/Memory Card.
2. Log in to Xbox Live.
3. Launch Minecraft.
4. At the 4J Studios screen, pull the USB stick.
5. Your xbox will tell you to put the card back in, don't yet.
6. Pick play Game (you should get an error about not being able to load your profile). continue.
7. Once in the game, put your USB back in the system.
8. Pause and Exit. Will ask you if you want to save -- I picked yes, though I doubt this matters.
9. Log back in to LIVE (pulling your USB should have logged you out).
10. Perform the action you need to get an achievement -- it should pop.
Hope this helps some people, it fixed it for me =)

I don't know if this will work, but try recovering your profile and then attempting the achievements
