I have an awful habit of leaving my xbox on. If you send me a message or invite and i don't respond it probably means I passed out with controller in hand.
I play on Normal, but I occasionally swap to peaceful to do some large scale building (for example my wall around the city i'm working on 1k+ Cobblestone so far, still need maybe 3 times that amount for it to be finished and I'm working on that alone for now since my friends don't know my plans for it and are working on their own projects). But for the most part I put it on Normal like I said, mainly because its the crossroads of the settings. I do it on PC also, because I don't like easy because its simply put 'Easy' and Hard/Hardcore is just not for me depending on the game. I could easily go on but I'd get sidetracked and start talking about something else lol.
I stuck it on Peaceful to do some proper building, but it feels pretty boring without hostile mobs.
Another reason I stuck it on Peaceful is because creepers were exploding right behind me without making a "hiss" sound first. The sudden loud bangs were making me jump out of my skin and I can't handle that. I'm happy to fight any hostile mob in a fair fight... but for the sake of my nerves I need to wait for a patch that fixes creepers. Their hiss sound needs to play as a warning.
There is no Hardcore because the Xbox does not yet have that difficulty.
I though hardcore was a game mode like in Diablo where it didn't affect difficulty only consequences (ie permenant death), and you still had to select a difficulty even after selecting hardcore. And even until recently I though hardcore was not an option for smp on pc.
Either way hard for smp on pc since I play with my brothers and friends there, or normal on Xbox since I play with my wife and 3 kids there.
I play on normal for now. I will change to hard after later updates. I change to peaceful when exploring caves since creepers are so hard to kill in enclosed areas, and I don't feel like making a new set of armor every hour of cave exploring.
I play on easy for the most part. Normal on me and my friends server. Peaceful on my free build server and hard when I just want a challenge. So all of the really, On my SP world it varies between easy and normal. Just depends how I feel.
I play on peaceful almost 100% of the time. I just think building is more fun especially if you're working on a large scale project or if you have 4-8 creative people in your game. Besides the enemies in this game are ridiculously easy even on the highest difficulty
Like others, peaceful for large-scale projects and easy when I need string, bone, gunpowder, etc.
As an aside, the left-stick-click for third-person view pisses me off. Often if I'm digging and I come upon a creeper in the dark my reaction is to reverse and jump, but a lot of the time I end up in third-person and run straight toward it.
Normal. When playing with players who have played little to none on Minecraft I go on easy. I think peaceful is ONLY if you are at Bedrock with half a heart left with 200 diamonds on singleplayer, and I have still yet to get to there.
Just curious and bored, so I made this poll.
I leave it on normal for multiplayer games.

Also, here is an awesome suggestion I had: http://www.minecraftforum.net/topic/1745550-biome-effects/
