if i were to tunnel underground to the end of the map and reach the ocean, would source blocks shoot out of the hole that is made?

No, pressure is not a factor in Minecraft. If you tunnel into water, it will flow but only because you have opened a path for it to do so. It does not endlessly flow unless on a downhill slope.
