From playing countless hours and days and years of minecraft, reading the entire thread, and taking an economics class, I would have to say iron is the best currency for these reasons:
*It has practical uses in-game, which makes it retain it's value. On a server I play on, the plugin currency lost it's value beacause it was worthless (especially when there are no admin shops and the economy is weak). If you wanted to pay someone for working, they would get something that they could use without using the economy.
*It can be gathered and mined. The problem with creeper heads or sponges is that when a player needs some, they are forced to trade with others, insted of mining some. It's almost as if the admins are trying to force the server's economy to run. With a weak economy, it becomes too rare, yet players are used to high prices.
*It's fairly common, (yet very useful). If players want to make change with it, they can. Like bobbysofamous said with sticky pistons and diamonds, iron can adjust the price to work. Using something rarer as currency makes people have to get more merch for 1 or 2 items. For example, diamonds are a bad currency beacause to buy cobble, the seller will have to sell at least 5 stacks or so to justify a diamond.
