I was letting my nephew play and he pressed the start button and pressed the share button and i took it from him and started backing out now i have no HUD and no hand (were the pickaxe is supposed to be)
You shouldn't have to redownload OR turn off your Xbox. There's an option in the settings to turn off the HUD and your hand. I'm away from my Xbox, or I'd tell you exactly how to get there...Just search through the settings and there should be an option somewhere.

However, the Wiki is incorrect about not being able to hide the HUD in the Xbox version. You can hide the HUD by going to "Help & Options" = >"Settings" => "User Interface" and unchecking "Display HUD." If you've lost your HUD, you can make it display again by rechecking the "Display HUD" option.
News update. I had this problem persist after deleting the game, the profile, and clearing the system cache. As a trying anything idea I reset the system to factory default in the settings of the main menu and when I went into the game the HUD was back and I could use the right stick again. I even loaded my old save that I saved after the glitch showed up and everything was working fine. I hope this helps everyone out there.
Apparently a new install of minecraft does not install at default factory settings for whatever reason... (My save was on the cloud and I was testing on the hard drive)
