People really need to understand that for now, and for a long time after, all you are going to get is what's already on the PC.
That means boats will stay the same. They still control funky, and still only give you sticks and planks when they break on the PC. Get used to it.

If I had known before I bought this game that we would be living in the past, in the bug-covered, simplistic past of a game that has presently been fixed and updated, forever restricted to a future that has already happened, I would have never bought this game.
I mean, come on, the development team knew about the current bugs years ago, basically, and they're still in the game. That's just unacceptable. They could have had at least one person who's job was to fix all the bugs that had already been fixed in the PC counterpart.

Haven't you ever played a ported game before? Not games that were co-developed on two+ platforms (ie: Battlefield 3) but games that were ported much later (Quake 3). It's really common to get an older version of a game initially that includes all of the old bugs. You'll also see new bugs. MineCraft 360 is a completely separate entity from MineCraft: Pocket and MineCraft.
If you wanted a version identical to the PC with all of the PC features..... just buy a wired 360 controller and play the PC version with it. :\

So what if they didn't do anything with boats on the PC? They shouldn't just shut out the possibility of making the game better just because the PC counterpart didn't.

Yeah, there were certain bugs they did know about. However, with how they want to update the game, those bugs will be fixed in time. take the clay generation bug for instance. It was present in the PC 1.6.6 just like it is on the Xbox. It was then later fixed once the game got to 1.7. That's exactly how it will be once the Xbox version reaches 1.7.3. All the bug fixes are already there, we just have to wait for them. On top of that, they have to fix new bugs that are completely unique to the Xbox version.
It was stated countless times how the development of this game was going to happen. They said again and again it was going to be 1.6.6 at launch and then follow the PC updates until it caught up with the PC. Just because you weren't informed isn't 4J Studios problem.

Have they said it's a completely shut out possibllity? No, they haven't. Their main focus is getting the game caught up to the PC right now. After that, then they will have time to mess with the Xbox version in it's own right.

I'm not sure if you've seen other ported games, but generally if this version did NOT have behavior from 1.6.6 and had all sorts of weird features back-ported..... not only would 4J have a very difficult time getting the whole thing to work but simultaneously fans would not be happy with the unrecognizable mutant-version result.
It's better for them to try to port exactly what was in 1.6.6 and then build from there. 4J employees have already said they intend to move forward in versions, there will be Xbox specific features (for example, splitscreen and I believe they mentioned the map will now show your coordinates after the update) and there is a possibility that some features will be backported earlier.
In the mean time, enjoy the blast from the past and go stock up on mushrooms while abusing the really dumb mob AI.

When 4J began porting Minecraft to the 360 the current version was 1.6.6. As a result all of the later fixes were not discovered at that time. 4J is not abandoning support for the game and will continue to fix bugs and provide additional updates beyond 1.0.0. Besides, you simply cannot fix a bug until you are able to replicate it due to all of the interactions in the code. Knowing that a bug exists in the PC version means nothing until your code is identical and follows the same rules. The fact that the 360's version has the same bugs that the PC version had at this point is actually a great thing as the port is accurate. This means that any future updates will be based upon the same foundation.
