Here is what I do, and I have alot of success. I dig down to the first layer of bedrock. Then I go back up 5 levels, I mine a long hallway. Then i mine perpendicular mineshafts off the first hallway. Making one every 3 blocks. That way you can see the ores in between the shafts without mining out the whole mountain. Works great for me. After I get bored of that level I move up to the next one, or the one above that. I find diamonds seem to be more abundant around these levels.
Dig to bedrock and then go upward 7-16 layers and start mining across until you find diamonds. I don't do any fancy shafts or tunnels i just randomly mine avoiding dirt and red stone. i find 15-25 diamonds per hour using this method. btw a good diamond seed is "worstseedever". i have full diamond armor and all diamond tools on everyone of my worlds using this method. I recommend bringing a map.
Strip mine at level 12-15. I found about 35 diamonds in just a few hours. Make a 2x1 tunnel and every 2 blocks mine a 1x1 hole into the walls as far as you can reach. Also, I know this is a no-no but also dig above you in the same order as the walls. If you find coal or red stone, dig around it because that is where I have found the most diamonds. Strip mining is quite boring though. I recommend using caves, I have been strip mining mainly to find caves.
I make a base of operations at bedrock. Then from there I dig multiple strip mines at different levels ranging from bedrock up to level 17. I also branch out in all directions, north, east, south, & west.
Channel mine ( A huge area 20x20) All the way to bedrock, then strip mine. Basically you find all the iron when you channel mine, and then diamonds when you strip mine.

I've found roughly 40 diamonds using this method.
Not to mention the other resources I found. (Including 2 dungeons).
I never thought of doing this. A risky move I am willing to take.
