I'm trying to build a glass structure under water and cannot figure out how to drain it. I tried tunneling from underneath to a large cave, but it just makes a constant waterfall. Any advice? Thanks.

I've not done it myself.... but to stop water from flowing you need to isolate it entirely from its source. So you'd need to make a completely boxed in enclosure before draining. If a waterfall is occurring, its still drawing flow from somewhere. Or the game thinks it is.
I'd just start stacking a buttload of cobblestone over the area you want, and make a giant square all the way to the surface. Then start hammering away at the center.

Good point. But to go one step further use sand if you are dropping it into water over bedrock. Go down to the bedrock and dig two levels down, then use torchesd to clear out the sand... much quiker.

I would find my plot of water I want to build in. Remove all the water by filling it with sand. Hollow out the insides. Build what I want to build. Re-fill it with sand. Replace top layer with water sources. Then get rid of all the sand and the water sources will do all the rest
This will probably take a lot of effort, but if you have a big project it would mean less messing around when water ends up in places you are trying to build in.
Pour a bucket of lava over the water? that would get rid of alot of source blocks at once. Anyway has anyone tried using half slabs? Makes for a nice look with the water still looking like it is flowing but not pouring in.
The way I built mine, I started with making the floor smooth stone. Then I created a 1 x 2 pillar and placed ladders on them to make an air pocket. Then I out lined my structure and placed ladders on the wall to make sure I didn't need to go back to my air pocket. Finally once I finished I placed the roof and filled in the center with dirt. broke the dirt and lit the area up. Voila. Underwater structure.
However because you want to make a glass structure, You'll need to either make the dome a block bigger in each direction that you plan on making it, placing the glass, and removing the original material. Or, you can just use dirt and make break one piece at a time till you've got a glass dome
the way i did it was box off an area with a sand perimeter down to the bottom of the water level. fill in perimeter also with sand. Once that's done, mine that sand, preferably at the bottom of it so it falls to you. build your house inside that perimeter wall, once the house is done, tear down the perimeter. although the wool idea sounds good too, but the bonus to sand or gravel fill is it will fall to the bottom for you, so you can place it from the surface.
Alternatively, to save sand if you don't have lots, build the perimeter small, like a 3x3, hollow out the middle some and keep expanding the perimeter while hollowing out the middle. Just make sure you can still get back to the surface, either with ladders or leaving a step system built by the sand blocks.
