I went into the nether yesterday and left it successfully before I stopped playing. Turned it on today and spawned in a void the is all bed rock, red sky, and no sun. I can't jump off of the edge or dig. Any body know how I get out?
You're on top of the Nether. Since you're technically in the Void I don't think you have any way of killing yourself. I think there is a way to use a boat to get back through somehow. Although it might only work to get on top of it.
You might literally just be screwed until the 1.8 patch comes out and you can starve to death.

I believe a patch that includes everything from the 1.7.3 update is confirmed to be the next one. So the 1.8 update should be after that. But its a big update so it could take awhile.
Do you think by having someone take a boat to the void they would have enough time to kill me thus having me spawn in the over?
If you could get someone else up there it might be possible for both of you to kill each other at the same time. Or figure out a clever way for both of you to die up there. I've honestly never had the issue. So I don't have a fool-proof solution for it.
Edit: If you go up to the top of the world can you set fire to the highest block even if you can't place another block? If so you might be able to get a friend to bring a flint and steel and suicide that way.
I think the nether is very bugged. I'v managed to play a lot today and have been in and out of the nether with no problems. Then when i turned the game off for a few hours and got back on and tried to go back to the normal world my console keeps freezing when trying to leave the nether.
The only thing left for you to do at this point is to: (Make sure to follow perfectly or else this won't work)
1) Turn Off Your Xbox.
2) Throw it out of your Window (Make sure it's the one without the Net)
3) Go to Mojang
4) Tell them your Xbox flew out the window.
That should get your Glitch Fixed.

This worked for me BTW.
If you have a bow and arrow look straight up, shoot, and follow the arrow and it will hit you and you will lose about 2-3 hearts each hit. That's what I would do.
Only two ways to fix this:
-Make your world online, tell a friend to quickly gather some arrows and a bow, and TNT, send him to the nether, make him kill you and him, you might get out. Worst thing: Friend is stuck there.
-Tell a friend to go find some obsidian, flint and steel, go to the nether and make him save, once you and him are up there make make another nether portal and get the heck out of there!
EDIT: I just remembered you can't put blocks in the nether...so the bow thing is your only option.
At everyone suggesting TnT and stuff. You shouldn't be able to place blocks on top of the Nether yet because the world height hasn't been updated you. You've always been able to go above the world height but you can't place blocks there. So the bow and arrow suggestion is about the only way.
One reason that may not work though is because I don't think there's any way for the other guy to know exactly where you are. You might just have to arrange to mean in a corner of the map or something.

There is a souloution the only one that does not include dying or waiting you edit you position in the world file change your real cords to 0,80,0 and you will sow up at spawn if you are suffocating than you will obviously die then go back yo spawn and dig down until you find your stuff if you don't suffocate you will fall or land perfectly at spawn (unlikely) but very important you change your old to 0 or you will still be in the nether

Not until the Anvil update comes out increasing the world height. And even then I'm not sure if they ended up patching that in the Nether.

This is a bug, you can't save in the Nether without this happening. You are official screwed. STAMP OF SCREWEDNESS-
