There's speculation but I don't think the exact information of the actual update is out yet..I think it may take longer than that for the xbox game to catch up to the pc version...we'll see I guess.
It will take a while but I think an update every 1 or 2 weeks sounds reasonable. The exception to the rule though could be 1.8, AKA the Adventure Update and 1.0.0, AKA the official release of Minecraft on the PC. And the only reason I say this is because so much stuff is added I don't think the whole thing could be re-coded in just 1 or 2 weeks. Once the update to update it to 1.7.3 it will probably be a month or so before 1.8 comes out. Could be faster, IDK. Just sayin it took 4J a whole year to recode Minecraft up to 1.6.6. Not saying that coding games is a cakewalk, just saying thats a long time. And not saying that minecraft doesn't have a ton of stuff in it already just saying that those 2 updates in particular added so much stuff it pretty much changed the dynamics of the game and just Minecraft in general for the better. Sorry for the long post, hope you survived through it.

I have heard from multiple sources that they wanted to release the earlier 1.6.6, because people were complining that it wasn't out yet. so they relased it to test for bugs and the multiplayer aspect before going full on commando 1.2.5. They have had the game completed for a while, they are still testing the full version now. it should be out by May, 25th. full up to date 1.2.5 version with regular updates as the PC version updates.

Some of you fail to realize. I believe it's been said, that microsoft has a limit on the amount of updates 4J can do. So they're obviously not updating that often. (I could be wrong, but I'm pretty sure that was said somewhere around here/twitter/something a few times)
You also have to figure, even if they catch up to 1.2.5 on 360, the PC game is going to keep going, so there's going to be even more for them to update.
So unless you want them to run out of updates and not be able to keep close to the PC version, I suggest everyone be patient.

Update patches are not limited by Microsoft, as they tend to be bug fixes or adding additional functionality that was previously omitted for, well, whatever reason the developer has. DLC on the other hand is what is limited to a max of 4, unless it is for games like Rock band. Believe me, with the bug list that has thus far been compiled for the Xbox version, Microsoft would be out right insane to limit patches. No, we have no worries about being able to reach the newest version in time. And for those, such as myself, who are cutting their teeth on the Xbox version, taking some time to release this is probably for the best.

You both are correct, the internal Cache where the Title updates are stored is limited. There is a finite number of title updates that 4J and Mojang can do. However, there are ways around that space constraint. EA games are notorious for massive updates. BF3 has 2 updates out on the marketplace one for 2.2 gigs and the other(albeit optional) 1 gig.

Question: Are you referring to when the update is loaded when the game is started, or are you referring to where the update is stored upon download? Because the actual download on whatever memory device is available on the system, be it the HDD, internal flash memory, memory card, or usb flash drive. The reason why I ask is because the updates you refer to have would have to be accessed via marketplace, where as the title updates I am referring to come up in the dialogue box when the game starts saying that an update is available. Like the day one patch for MCXBLA to update it to 1.6.6. Those updates tend to be very limited in size, and run with the game after they have been installed.

But you have to admit 7 people recoding from java to c++ AND onto the xbox, a year is not too shabby.
