The main reason the worlds arn't that big is that an infinite/huge world would take up to much memory on your XBox. But then again; some people have 250gb hardrives.
So here's my idea.
When creating a world, there is a checkbox that says "Bigger world size"
When you check it, a warning will pop up that says:
"Warning: Bigger world may take up more memory. Are you sure you want to continue?"
Simple as that. There still wouldn't be infinite worlds though.
And maybe instead of a check mark, there would be a slider (Like the difficulty slider) that has many different sizes.
The current file sizes on the Xbox only take up 10-20MB of space per world. I highly doubt that would be an issue, even for people with the 4GB Xbox 360's. The issue isn't with HDD space.

the xbox only has 512mb of ram, running at a low 700mhz, it would struggle with anything more i believe
edit: although i would love for them to figure out a way!
