You really don't. There are various glitches in the PC version that allow you to see through the ground and into caves. But I'm not sure if they are in the 360 version since the programming language changed.

Dig deep everywhere , find giant caves that are really really deep . They are usually in there. I have found one but I can't get into it , too many zombies .
Walk around, you'll find caves or holes in the ground. Once you're down there, keep following it down deep.
As far as the one full of zombies, it's probably a spawner! Mine an indirect path over or under the spawner and kill it, then come back later for your prizes.

one word all lowecase, there's an exposed zombie spawner at spawn, and another exposed spider spawner near the top left of the map
this is what i do when searching for caves i keep only 1 0r 2 pick and dig strait down if i die so what i only lose a pick . second way is to dig down by 1x2 stand on 1 block and dig 3 down on 2 block jump down if you see the blocks if not dont jump you found a cave and dont destroy the spawner put torches around and use it for a mob killer.
Find a huge cave, go down deep, and keep your eye out for cobblestone. Also, if you are digging a mine from surface level, listen for many monsters of the same type in a certain area. Good luck
Sometimes you can see a square hole in the desert. This is from a dungeon that's very shallow; it's also easy to beat because mobs won't spawn in sunlight.
Walk around during the day and listen for mobs. Average world should have a few shallow dungeons but it's all dependent on the seed. I wish I knew the seed but I had a 1.6 world on PC that had 5 shallow dungeons relativity close to spawn. Sadly my computer crashed and the world became corrupted.
Lastly lots of caving will yield plenty of them. Most dungeons will be exposed to a cave.

Yeah, follow the water in the mountainous area until you hit the wall of a mountain. You should see gravel, Just dig and follow the little "cave" and its right there.

But basically make downward stairs in multiple areas, I've found some HUGE dungeons that way.
