My wheat farm is growing too fast for me to harvest. How do you have yours set up? You need to plant them in rows, with no wheat touching each other to the left and right. My farm looks like this:

Ok that's not too pretty but the idea is to keep rows of wheat growing within four spaces of a row of water so the soil's hydrated and neighboring wheat crops don't slow the growth. Also build a fend around your farm so mobs don't trample it.
