no there is no brightness setting they stuffed up. please don't post a useless statement unless you know it works or you have done it, it is my pet hate when people do that: "did u try restarting it?", Get real people (lol not u, just those types of people in general). this is the xbox minecraft we are talking about, the options are very limited and quite different, theres no running, its pitch black at night, torches do not throw as much light, animals drop items less often and the world is a squashy 1024x1024 area. They obviously did this because they want you to wait for the next update, its all marketting strategy, oh except the darkness they stuffed up. also you cannot change difficulty mid game, which really sucks when your playing a difficulty and u slip up with heaps of gear on you and u just desperately want to change to peaceful to save urself, although i guess thats what makes a game a challenge.
The 'Gamma' option brightens the screen, it's like the 'Brightness' slider on PC.

My problem is, when night time comes it's REALLY dark. So dark that the screen is basically pitch black(also with caves)
I know for a fact that it should be lighter then that...

Your only option is to turn up the brightness on your TV at the moment.
There is a brightness setting. It's called Gamma.
