On Xbox games, you always have the choice not to update, but won't be able to play Online Multiplayer. You still can play with friends on 1.6.6, but if you update you can't go back.
They're going to have to make all future updates optional, considering xbox users don't have the luxury of being able to mod out the features you don't like. If they don't give us option to disable hunger, enchanting, not having passive mobs respawn, the new combat system, and being able to choose which terrain generation we want then I certainly won't be buying the xbox version.

actually, you are able to go back, just delete your xbox's memory cache in the memory management menu, it removes all updates for all the games, its a great fix if you have any problems that arised from an update

I'm not very fond of the Pc version they're intending to update it to.
Minecraft really needs an official version changer..
