Just curious, if you don't have friends to play with on XBL why on earth would you spend 20$ on it instead of sticking with the PC, up-to-date version?
But back on topic, if they don't just jump to 1.2 I'd definitely say slimes, pistons and repeaters.

Each update on the PC had new bugs because they had (I'm guessing) 20 or less people bug testing for a very short amount of time. If they did a closed bug test as I said above they could easily get all of them.
By the time they got to 1.2.5 if they did it one update at a time, minecraft would be a bunch of updates ahead, meaning Xbox and PC versions would never overlap allowing Xbox-PC multiplayer. Updating from 1.6 to 1.2.5 in one big update is really their only option.

Just an update to what I said earlier, apparently they answered twitter questions and said they would update to 1.7.3. Previously they had said they were just going to go straight to 1.2, but now they are saying this.
I think it needs a better multiplayer system fast.. only being able to join friends servers is a drag... especially for a guy like me that doesn't have friends who play Minecraft.
