I'n a video they said they needed a place to start so that was '1.6.6' but later on they said they are going to be updating the game as quickly as they can to be up to date. How fast do you think each update will take? Remember Microsoft puts the updates out.
I heard about once a month. I can't remember where I saw this though :(.

You could make the argument that it will be pretty fast - the updates have already been bug-tested on the PC so they won't have to make those mistakes again
However, you could also make the case that it will take a while - when re-coding the updates they may create all-new bugs that will have to be fixed before release.
I'm not worried, I am looking forward to pistons, jungles, canyons, and the improved map height, but 1.6 was a fun build too.
I did a little searching and came up with the following info:
(Paddy Burns, chief technology officer at Minecraft port developer 4J Studios)
According to Burns, the plan/hope is to go with bi-monthly updates for Minecraft on XBLA. Looking at the bigger picture, a quickening of the certification process means a better experience in all games, since updates and fixes will be able to be rolled out in a more timely fashion.
Microsoft has a policy set in place for how Arcade games are updated. I believe it is 1 or 2 times a month. So the game could be at 1.8 by the end of May if that is how it works.

Nobody can make that argument, justifiably at least, they're completely rebuilding the game in a completely different coding language, similar bugs are entirely possible. I think the only possible realistic argument for fast updates is that nobody has to think about what to do next, they already have a long list of exactly what needs to be done.
My guess on update times would be every 2 weeks at the very fastest or every 2 months at the very worst. I'm hoping for at least 1 a month though.

I agree to an extent, that 1.8 did shift a little from core gameplay, but the only resaon I hated 1.8 was because of lag issues.
But that won't be a problem on console.
