Me personly looking forward to the xbox version of minecraft as i have a crap computer,
But cant help wonder why is it being released at 1.6.6 and not up to date.
I cant find an answer why so maybe you guys have the reason.
Seriously though. The guy above me is wrong. Its because it was either the version the PC version was at when the XBLA version was annoucned. Or its what version the PC version was at when they started developing the XBLA version. They just didn't decide to go back to 1.6.6 because they didn't have anything newer to go back from.

I'm usually not trying to be rude. So if a post comes across that way then sorry :]
Minecraft for PC is written in Java. I'm not sure what language they are using for the 360 version. But the thing is, is that they can't just simply rewrite the game in a different language and have everything run perfect. There will be bugs on the 360 version specific to the different language they are using. They started development when minecraft was 1.6.6. They have to get that version bug free before they can work on a higher version.
It Could Possibly be Like A New Game And By What I Mean Is That It's For Xbox... They Can't Just Rush Into It (Unless You Want More Bugs Really Quickly) New Controls To Program To!
4J has stated many times why they chose 1.6.6 as the starting version for Minecraft Xbox 360 Edition. They've said it was the best stable version for them to start rebuilding the game from. It was right before all the complicated contents heavy updates started coming out.

Yeah. If they had started at current it would probably be late 2013 by the time they even got near releasing it. Just too much stuff in the current builds. It's usually best to start off at a easy state anyways.
They probably started on it in 1.6 so they decided to finish it then update it. They cant build the game then delete and add parts of it every week before it is released, or they would never finish it.
You guys are all wrong, and obviously haven't been keeping track of the Minecraft development for XBLA as close as I have. IGN reported that it will start on 1.6.6 due to the lack of a hunger bar which is developed in 1.8, the game will eventually catch up to PC.McAngus is right, they have decided to start before the complicated updates. its obvious because they will have to add all the new features and everything like the end and stuff like that it would not be worth waiting just for the full thing i would rather have it now than in a year

Hmmm What to do what to do i know MINECRAFT! Wheew oh wait It Doesn't work and it didnt work since 1.8 ):
The people at 4J studios aren't lazy. Its just that porting minecraft over from java to xna C++/C# is not just changing/renaming the methods. They have to rewrite minecraft from scratch and 1.6.6 is supposedly the most stable version with the bug fixes and all to start the porting.
Im guessing they would take about 1 to 3 months after release to be able to catch up with the ever updating pc version. There has been times when a game can cause a console to brick so i am supposing they have to thoroughly destroy all possibilites of that happening or else it would be bad for the damage repayment and all. Better safe than sorry i suppose.
lets reason it out. They would have to take the most stable and simplest possible (but still player enjoyable) version, and then convert the code language, or in this case simply rewrite the whole game. After that they have to scan through the code about 6000 times because people often make, and miss, mistakes in the programming. This can happen as often as 20 times a line, or a line could be entirely forgotten. After that, they have to look for bugs in the program where the execution scenario doesn't make sense, which causes the game to freak out and try to cause said scenario.
AND AFTER ALL THAT, they still have to do an in house alpha, a closed beta, an open beta (optional), and then prepare the game for release to the masses, meaning that they have to get all of the storage servers up and running.
This is all made simpler by what is said in the second sentence. Thats why they chose beta 1.6
