These are the official controls for Minecraft on the Xbox 360. Remember that this is from Minecon which was demoing an unfinished version of the game so these might change.
LT- Use
RT- Action
LB/RB- Cycle Held Item (Like the # keys on your keyboard)
Left Thumbstick- Move
Right Thumbstick- Look/Sneak(Crouch)
Start- Pause
A- Jump
X- Crafting
B- Drop
Y- Inventory

The thing with both breaking and placing blocks with one button is interesting. Using an Xbox controller on PC negates this ability. I'm glad some actual code allows this.
Various clones make you dual wield tool and block. This seems like a much better alternative.

Pretty much why I figured I'd put it here. I know that people will still not see it somehow and post topics asking about it.
