I don't imagine it to be bad, if you have ever played any of the Xbox indie versions of Minecraft, like Total Miner, the crafting is not much different, except you just use an analog stick instead of your mouse to select certain parts of the grid.
Guys, I was there and played minecrat for the xbox. I can explain a lot of this stuff:
The sensitivity, set to its highest 200, is very low and stiff, and hopefully they will increase it for the game.
Crafting is completely different. Instead of putting the items in yourself, you scroll through a large list of items that you can craft and press A to craft them if you have enough materials.
Moving items around is pretty similar, you move a cursor around with the joysticks. However, the cursor sort of locks onto the items, it's like the squares of the inventory are magnetic in the center and they pull the cursor in.
Everything else, basically the same, less a few crashing issues.

For crafting there's a scroll of craft able stuff you just need the materials to make them but chests are difficult maybe it's Analog stick to move a highlighted block and A to confirm or something

Sensitivity set to 5 like all my 360 games; as for it controller adjustment, I play on my 360 all the time and I have come to love so I do not thing it will be all that hard.

The game is not out. It has only been shown and had a playable demo at Minecon.

Notch said on his blog that he's the lead developer of all versions of Minecraft. It's just the programming that other people are doing.
