Has anyone had luck with either A) making resource packs that work for Minecraft Edu, B ) taking existing mods and getting edu to cooperate, or C) taking pieces of existing mods and turning them into resource packs that edu can recognize?
I'm currently teaching a course where I'm stuck using Minecraft Edu for a number of reasons. I want to modify the mobs so they make more sense (it's a map of our Midwestern campus, so having horses or polar bears running around doesn't make a whole lot of sense).
Some exploring got me to Tynker, and I was able to turn the chicken into a pretty decent goose....but the mod does really funky behavior things when you try to make some changes, and you've got very little control over behaviors. My first attempt at modifying a squirrel ended with a bunch of creepy floating blocks like he'd exploded, and right now I have a llama modified into a deer that looks great until it turns its head, because the tail moves with the head and ends up temporarily floating in space.
I'd love to be able to work with a mod like Mo Creatures or other creatures mods, but I've had no luck. I've also tried making my own resource pack, but edu hides their asset files like they're made of gold and I'm just a bit frustrated.

Any help at all would be appreciated.
I don't know how to help but how did you manage to add new skins/textures to the mobs?
