Too bad Mojang/Microsoft don't monitor their own 'official' forums. Your question is totally valid, yet to be honest, though not so tactful, Mojang and MS have their heads where the sun don't shine and have never ever ever understood how to support users with totally valid questions. The only thing they do well is process your money into their accounts. I know it sounds cynical, but it's the ugly truth.
I think it's fair to assume that right now they're working hard on getting the game going and improving the game. When you're in contact with Microsoft you can tell they're still working on getting Education Edition off the ground and I think that's why right now they haven't addressed home-schoolers because their primary market for this is schools with a lot of students. So sadly there's no easy way of obtaining it if you're not part of an educational institution, but there's still the Windows 10 edition which can load all the worlds made for Education Edition, and since it's just you, the functionalities that M:EE adds won't really be necessary anyway I'd assume
There's really nothing that isn't available to you, you just have to buy a license for Minecraft Windows 10 Edition instead of Minecraft Education Edition. All the worlds created and shared on education.minecraft.net will still be available
