Seasons: Whenever you play your world you must go to the biome according to the current season (ex. snow taiga for winter, roofed forest for spring, desert/plains in summer, and birch forest for autumn).
Villagebound: You must go to the nearest village after punching a tree and getting saplings. After you find a village you cannot build/explore more than 5 blocks away from it. If all of the villagers are killed you must delete the world.
Poverty: Live in the worst conditions possible (max stone tools and leather armor unless getting diamonds, eat only rotten flesh and spider eyes, all houses must be made of dirt and other cheap, ugly materials)
Vegetarian. I'm not one in real life and in game I always have more steak than I know what to do with so I think playing as a vegetarian would be a challenge. There isn't much saturation in the veggie food items.
You may only break one naturally generated tree and then build a house in a plains biome. You can only plant one tree at a time. (You plant a tree and must wait for it to grow and be chopped down before growing another.) Hence, "One tree".
That's pretty much the way I play; if you want to find, say, a village or new biome you must find it by exploring caves underground and following them wherever they go (not so easy to do in current versions). The only exception is when I find a stronghold and anything along the path to it; otherwise, my worlds are entirely mapped out while underground.
Heavy feet: No jumping. Only use slabs, stairs or the similar to ascend blocks. Best to cheat yourself a repeating command block/command block hooked to a redstone clock with /effect @a 8 1000000 255.
Rationing: No farming animals or plants. Always eat food with the lowest hunger restoration and saturation possible.
Fearless: No armour, shields and bows allowed. You can only kill using melee combat.

Goal: In order to get items, you'll need to trade to get them. That's right, if you want an Iron Pickaxe, you HAVE to trade to get it instead of crafting. You only need to do this with trades that you can buy. You can still craft wooden pickaxes and golden chestplates as you cannot get them from Villagers.
It's best to go on Creative and use /locate to find a village then spawn them in there. Then you can do survival stuff.

Those sound like fun challenges. That first one would be terrible on my current realm seed, I've yet to find snow.
For the Poverty, you should be forced to live in a Swamp biome, or that Covered Forest where the mushrooms and dark oak are.
You could have another one that restricts you to subterranean life.
