I think that there should be a new boss in the game. This boss would be called the "Enraged Zombie", and would spawn rarely in the overworld during the night. The Enraged Zombie boss would be twice the size of a normal Zombie, and will not burn in the sunlight.
They are hostile, and will start to attack you when you get within 5 blocks of it. It would have a 0.01% chance of spawning on easy, 0.025% chance on normal, and a 0.05% chance on hard. The Enraged Zombie would have 100 hearts of health, and regenerates 1 heart every 20 seconds when in darkness. The Enraged Zombie would also be immune to all potion effects.
When the Enraged Zombie attacks you, it will damage you and inflict you with certain effects depending on the difficulty:
Easy- 2 Hearts
Normal- 3.5 Hearts, Poison for 5 seconds
Hard- 5 Hearts, Poison for 5 seconds, Slowness for 15 seconds
The Enraged Zombie will summon more Zombies once its health gets to 50 hearts or lower. It also starts to destroy blocks to get to you when its Health gets to 50 hearts. It will take 30 seconds to break any of the listed blocks. The blocks that it can break depend on the difficulty:
Once you kill the Enraged Zombie, it will have a chance to drop the following items bellow on all difficulties:
300 XP Points - 100%
32 Rotten Flesh - 100%
32 Bones - 100%
16 Raw Beef - 100%
10 Iron Ingots - 75%
1 Iron Pickaxe - 60%
1 Iron Axe - 50%
1 Iron Sword - 40%
5 Zombie Spawn Eggs - 25%
2 Diamonds - 1%
1 Enchanted Book with Smite VI - 1%
Because of how powerful it can be and what it can do, here is a list of recommended stuff to carry if you fight the Enraged Zombie on easy, normal, or hard:
Easy: 2 Sets of Leather Armor, 2 Stone Swords, 16 Cooked Beef, 1 Bow, 32 Arrows
Normal: 1 Set of Iron Armor, 1 Iron Sword, 32 Cooked Beef, 3 Golden Apples, 1 Bow, 64 Arrows, 2 buckets of milk
Hard: 1 Set of Diamond Armor, 1 Diamond Sword, 64+ Cooked Beef, 5 Golden Apples, 1 Bow, 128 arrows, 5 buckets of milk

I agree, change the spawn percentage and I think this could be a cool boss. However, I also think that perhaps he also only be able to be summoned.
That way if a player wants to take on this behemoth he can do so when he wishes. I'll leave the summoning details up to you, IF you want to add to this. The idea does have great potential as it stands though.

Hmm. Yeah, Enraged Zombie needs a better name. Farmable diamonds is problematic. Diamonds dropping is bad; make a unique item drop instead, perhaps some sort of special weapon or tool. Spawning naturally is bad; summon it with a zombie altar crafted out of flesh blocks, maybe, to make rotten flesh have some sort of use.
Overall, little support, but with some work, it could turn out to be a good idea.

Did you read the whole post, because even if the spawn naturaly, you have to be pretty darn close in order for it to start attacking you. I will lower the chance of it spawning so I don't get anymore obnoxious people that use huge fonts.

I fixed the farmable diamond problem by lowering the chance of them dropping to 1% and the diamonds dropped to 2. Also, I lowered the chances of it spawning to 0.01% on easy, 0.025% on normal, and 0.5% on hard. Not to mention that they start to attack you when you come very close to it(5 blocks), so you can easily avoid them.
It's horribly uncreative to have a boss mob that's just a stronger variant of an original mob (I know there are Elder Guardians but at least those are restricted to the ocean monuments). There should also never be a naturally spawning boss mob in the Overworld, because you're gonna punish some unlucky new players with this, and the spawn chance doesn't cancel that out.
The drops are also way, WAAAAAYYYY too generous.

Natural spawning bosses are fine in a mod or Modpack, where the player knows what they're getting in to.
This sounds very similar to the Giant or the Mutant Zombie from The Hippomaster's Mutant Creatures mod.
Very small amount of support, there should be a proper overworld boss, not just the Elder Guardian and Killer Bunny, however it should be unique and not a big version of a regular mob, because if there is it wouldn't work without there being boss variants of all hostile mobs.
EDIT: also a mob with 100 health is easy to kill, so this mob wouldn't be a boss, just a rare slightly more powerful mob.
I think this is, in general, an entertaining idea, but I also think it should have an original drop with an original purpose.

Hard- Dirt, Gravel, Glass, Sand, Cactus, Wooden Plants, Wood, Sandstone, Doors So, on easy, it will destroy the terrain, on normal, it'll take out your cactus farm and your old wooden hut, and on hard you can say goodbye to your house. Sure, it takes time, but you can't beat it since you're slowed and poisoned, so there's nothing you can do about it.
Once you kill the Enraged Zombie, it will have a chance to drop the following items bellow on all difficulties:
300 XP Points - 100%
32 Rotten Flesh - 100%
32 Bones - 100%
16 Raw Beef - 100%

The chances for Diamonds to drop are too high in my opinion, and if they are dropped, it makes it so diamonds could become farmable in The game.

Technically, the AI would be different from the zombie, because it is a boss mob. Btw I'm not sure about the AI yet.
I intended the original drop to be the Smite VI book because you can enchant a sword with it, and it makes killing undead mobs A LOT easier.
