For your first one, you can summon one armor stand per bedrock and water then use /spreadplayers around your spot to randomize it. Next you just /fill with dirt and replace only air.
As for the second, you can set up a scoreboard objective to track deaths then set up a command to /gamemode 3 @a[score_Deaths_min=1].

To send them a message you could do /tellraw @a[m=3] <Message>
If you want a clickEvent in this message you have to use JSON:
/tellraw @a[m=3] {text:"Do you want to change your gamemode? Click here!",clickEvent:{action:"run_command",value:"/gamemode <gamemode> @p"}}

To clarify, this will only work if the player is an OP. If you want this to work for non-op players, you'll need do set up a /trigger command instead.
