I have been away from minecraft for a few years, what's changed? Last I played was right when they added baby zombies and the three different types of stone. Are the old Mob grinder, Iron Golum Farms, and automatic chicken/cow cookers still viable? How has villager mechanics changed? are the trading machines still worth building? Anything new in enchanting?
Depending on from which Version you're returning from.
If you are returning from Before 1.9.0
The only Massive thing thats Entirely changed is the PvP system.Shields have been added and Dual Wielding is now possible without mods.The Old Mash Mouse Click Doesn't work now, Simply mashing the mouse click won't do any damage.However You would have to Time your Strikes to deal the Most damage.And Axes now do More damage than Swords but they are slower (higher recharge time for full damage) I think a Stone Axe does more damage than a Diamond Sword now for some reason (I might be wrong on that).
Other changes include some new Mobs and Structures in the END.
We got 4 new structures: the igloo, the end city, the end ship (where the elytra is found), and the woodland mansion. Changes to existing structure types include villages in taiga biomes (and that villages can now sprawl across biome boundaries), surface mineshafts in mesa biomes (along with a drastically increased amount of gold ore), and an expansion of end strongholds from 3 per world to 127 per world.
The End fell on the overworld in a pickup game of full-contact spleef with the Nether, a little bit of land squirted out and landed on its butt. Endermen promptly built shrines to this miracle and made the happy discovery that they could now visit the nether whenever they wanted (tl;dr: we got gateway islands stretching off to infinity in the End with end cities and end ships on them, endermen can now spawn in the nether).
Villager mechanics didn't change, but we got 4 new villager types plus a summoned-minion mob that can inherently noclip all over the place. Two of the types are goodly folk, the green-robed nitwit (has no trades) and the white-robed cartographer (he sells, among other things, maps to ocean monuments and the new woodland mansions). The other two types are evil versions called illagers that look like they were voted off smurf island for not being blue enough (they're mostly grey with the barest hint of a blue tint). One's a magic-y sort called an Evoker that has a really cool damage-dealer spell, the other is a melee type that has an ax-murderer easter egg associated with it (name one Johnny and give it an axe and it will run around killing everything in sight). The evoker can summon a chicken-sized ghostly mob called a Vex.
The way mobs are stored in data was changed so that each mob varient now has its own separate id. This means that you can no longer get zombie villagers from zombie spawner cages.
Notch apples (1 apple surrounded by 8 blocks of gold) are no longer craftable, and are limited to loot tables.
We can glide through the use of elytra, which brought forth a really awful fad that led trolls to exclaim "Dude, stop hitting yourself.". Once everyone finally realized just how embarassing that was (it was almost as bad as disco), Mojang gave us the ability to launch ourselves with fireworks rockets, at which point some of us had to step in with interventions when others began to shoot themselves with the colorful explode-y variations.
In the epic struggle for dominance in our farmyards, wolves were taken down a peg or two with the introduction of spit-happy llamas (llamas will attack wild wolves when they get too near). Donkeys have lodged a formal complaint with PETA and similar agencies, complaining that those "illegal L-ians" are taking away their jobs (llamas can carry chests and up to 10 can follow each other in a caravan).
In the end cities, there is a turtle-like mob that has a shell called a Shulker that spits homing globs of goo that afflict you with the Levitation effect. They haven't been around for long, but they recently started molting. Casual beachgoers who got lost and somehow ended up deep in the End discovered these little bits and pieces and using a clever bit of arts-n-crafts know-how have fashioned what's called a Shulker box. It's a chest that can stack in other chests (but not itself) that will retain its inventory when broken.

I don't recommend using the default launcher for modded Minecraft. MultiMC is much better.
I use the "linux" launcher, which is actually the universal java launcher.

Nothing much except it's all headin' PE the pocket Minecraft version , as for PC Vanilla, mostly Modded add~ons stuff that
is essentially MMORPG.
I'm still running a 1.8 (and on) server, so for me, almost nothing since I've been gone

When your servers on 1.8, but you play like 1.9
