And while the sweep attack is charging up, the zombies are hitting me, or a creeper is approaching. I'm saying I should be able to dispatch the skeleton without having to wait for the sweep, or at the least the sweep attack needs to be buffed.
As far as I'm aware, Smite and Sharpness are mutually exclusive unless you're cheating, which I don't do. I already have Sharpness V on my diamond sword, but it takes three sweep hits per zombie to kill them. Incidentally, I remember diamond swords being significantly better than iron swords before 1.9, but now the difference seems marginal. Moreover, I did some research, and basically everyone who commented on the Knockback enchantment said it was bad, so I'm not keen to use it on my irreplaceable diamond sword.
The shield annoys me, but that's less criticism of the combat mechanics than personal preference. There's a reason I play a rogue, mage, or gunner in the other games I play. I don't much like having to use a shield in games, and will avoid doing so as much as possible.
I didn't know about the jump attack, though, so that is useful. Does a plunge attack exist too? I once dropped off a ledge onto a witch just for fun, and when I hit her, the game made a sound that seemed to indicate a power hit. That was something that I only had one good opportunity to do, so I haven't tested that since.
It doesn't come as a surprise that you're having difficulties if you're just not going to use the things that make it easier.
Still, here's some help keeping your preferences in mind. Skeletons fire predictably. If you move to the side right as they're about to fire, you can avoid them most of the time. Timing is the key.
When you are falling, hitting a target produces a critical hit. This should help you significantly against melee mobs.

A diamond axe, combined with a high-level Smite enchantment, combined with using critical hits by jumping and swinging, will oneshot zombies and skeletons. However, a sword is better against a crowd, because of the sweep attack.
Use your bow. Pick mobs off from far away.
Keep an eye out for crowds of mobs. Do not run into a crowd of mobs. I shouldn't have to say this, but you're no longer an invincible pest control unit like in 1.7. It's better to stay at the edge of the crowd, attract a few at a time, deal with them, heal up, and then try again... at least until you get good enough. Sure, it may take longer, but you'll live. You should also make sure you have a place to retreat to. You gotta use your brain, and plan things out.
I can survive building enormous projects at night, in sheer darkness, on Hard, with no armor and no shield. It's not because I'm good at combat. It's because I pay attention and plan encounters out.
If they could just make a gamerule from this. And for those of you who said that you can use command blocks to change attributes or whatever. No one is skilled enough to play with command blocks.

VERY BAD! Now I have to hit my opponents one by one, which makes me even WORSE at PVP than I already am. I was just starting to get the hang of it, but they just HAD to change everything. Now even killing a zombie is challenging.

So yeah... When talking about the combat changes you're not only talking about a sword which might take longer to use now, you're also talking about (much) more advanced ways to protect yourself against enemies. Yet it seems to me as if most people on this thread are totally ignoring that part.
Some that talk about it just ignore the shield, either out of some strange unknowable dislike of it or because it blocks part of their vision. Strangely, or perhaps not, switching it out doesn't seem to have occurred to them.
In my personal opinion I didn't really like the new 1.9 combat physics. The main reason for this was more or less because I became so accustomed to just spam clicking when a hostile mob was in front of me, also because that's the way the combat physics were since...well...combat. I'm not going to lie though, the new physics are extremely handy for one-hit mob farms where all you have to do is swing your sword once and everything is dead compared to spam clicking and killing every individual mob.

I guess there was one good thing abut 1.9. It's that they made axes more powerful than swords. That is a good idea because a diamond axe is more expensive than a diamond sword both in sticks and in diamonds, so the axe should be more powerful.

The new system isn't any more or less intense and fast paced than the old system. Sure, it's a tiny bit slower. But the trade of that is that it feels a lot better, a lot more intense. Attacks actually feel like you have some weight behind them. And the shield makes it so that bows are no longer by definition the best way to PvP, because players can your shots.
And smoother. The combat also gives you an opportunity to escaped from other players.

I dont have a problem with either combat system, they're different and one is better for people who prefer action and fast-paced fights where you have to think quickly, and one is better for people who prefer slow, strategic and timed fights. As I said, I don't mind either.
But boy oh boy, do I love how the new combat fanboys try to find excuses as to why an optional old combat toggle shouldn't be added. Just because you like a different combat system to them, doesn't mean you have to stop them having the combat system they like. You can still play 1.9+ combat however much you like. And then they complain how people who prefer the old combat (which isn't a choice, it's a personal preference based on how much someone likes the new combat) are "stubborn" and "don't like change". As I said, I'm pretty neutral on the actual combat issue, but I strongly feel mojang should make both sides happy and add individual toggles such as:
Remove the attack cool down completely
Revert tool damage (including axes)
Make the shield function like the old blocking (shields wouldn't completely absorb anything)
Disable sweep attack and axe stun thingy
Other combat changes which I forgot
This way, people bring back the features they liked while adopting new ones they like too.

I would update as well, unfortunately the MASSIVE amount of behind the scenes coding required to make such a slider means it will never happen. Unless maybe they toggled only the cooldown thing an left all the armor and damage compensations alone. They probably tested that idea and opted out.

Stop using "Regular PvP" to describe 1.8 PvP. If anything 1.9 PvP is the regular PvP because it's the most updated version.

Now, you could just give yourself a diamond sword with no attack speed and custom damage, but that won't disable the feature. The next diamond sword you make will be reset to default.
In order to actually do this, you will need to cycle through every inventory slot in every player's inventory and replace all the weapons with your custom one. Since there are no for loops in command blocks and you can't use scoreboards in regular commands, you would need one block for every inventory slot. You would also need to set a specific item to look for in the command block. And it would have to execute every tick.
That means that if you were trying to do just a diamond sword, you would need to use 36 repeating command blocks (one for each slot inventory + hotbar). And the command wouldn't be easy. Just one command would be this:
Even if you did this, it would not completely remove the problem because it doesn't do every weapon. You would have to copy each of these command blocks 20 times in order to cover every weapon in the game. That's a total of 720 command blocks activating each tick. That value increases by 20 after doing it for all the entities. That's a grand total of 740 blocks. You would also have to disable all command block outputs in order to keep the game running smoothly.
Even after doing all of this, you would have to find some way to make it compact and easy to use.
If you finally got to the end of the process, if you think the game would still run smoothly, you'd be crazy. There would be so much lag, you would have to have extremely low-quality settings in order to even play the game!
Even if you were willing to sacrifice that much, keep in mind that this would not be accessible in hardcore mode or survival since you cannot edit command blocks. Not to mention that you would not be able to disable sword and axe powerups(when you hit with a sword standing still and hit with an axe while jumping) at all.
That's a lot of time, work, and sacrifices just to disable 1.9 combat. However, If you just added a gamerule, all this could be done with a simple if then else statement. True, you would have to do this for every weapon, but it's a lot easier than using command blocks.
Now, you might be tempted to say, "But you could just assign attribute modifiers to all the items in the player's inventory!" However, that is not possible with commands like it is with blocks and entities. There's a blockdata command and an entitydata command, but there is no itemdata command.
Oh, and one more thing: If you support disabling 1.9 pvp using command blocks, you kind of already support 1.9 pvp being optional.

Now, you might be tempted to say, "But you could just assign attribute modifiers to all the items in the player's inventory!" However, that is not possible with commands like it is with blocks and entities. There's a blockdata command and an entitydata command, but there is no itemdata command.
Oh, and one more thing: If you support disabling 1.9 pvp using command blocks, you kind of already support 1.9 pvp being optional.

To download the other ones you need to make a folder in the versions folder for minecraft and put the client and JSON file for the versions in there. They all need to be named the same aside from file extensions. Once you do that, you will be able to choose that version when making a new profile with the minecraft launcher.
