The texture may be changed in a future update. As of now, it will remain the same. The only difference is Ebony Ore spawns between 0-10 on the Y axis, and will spawn in smaller veins than coal.
Dragons is a planned feature, most likely will be released during Beta. Special weapons/armor from guilds and such will be released sometime during Alpha.
Don't worry, this mod will be one of the first to update in 1.8 :).
The Official SkyrimMC Server is being developed fairly fast. Expect it to be released hopefully by August 11 (Monday).
Alpha_2.3.1 will be out soon with texture fixes for light armor. Daedra Hearts and dwarven metal items will be fixed sometime soon (whenever my texturers finish them :P).

I am working with some builders to get a map built to play on (like an adventure map), but this is a ways away.

By different caves i mean some of those different caves in Skyrim (The annoying Draugr maze caves. Puzzle caves. That one where some sort of guy is digging you pay him gold but he turns out evil and kills u

Alpha_2.2.1 is complete, just waiting on some textures to come through, and it will be ready.
This update should fix the missing armor textures. All other missing textures will be fixed in a later update.
