Is there any way to have shulkers and shulker boxes have different textures? Apparently they use the same texture (found in [.minecraft > assets > minecraft > textures > entity > shulker]), which makes it impossible to change one without changing the other. Well... no and then also yes. Let me explain.
So in vanilla Minecraft the answer is just straight up "no". Mojang wanted to always have the shulker the same as the purple box. There's no getting around that, unfortunately.
That said, the way to get around that is with Optifine. Specifically with the Random Entities feature. Don't want entities to have "random" skins? Well then just set it up to where the shulker has a random pool of exactly one skin, meaning that it'll always choose the same one. Importantly though, this only affects the Shulker itself - not the Shulker boxes.
If you'd like to see this in action, feel free to check out my now-defunct "Sanity" pack (link in my signature) where I do this exact thing. It's for an older version of Minecraft but I don't think that anything has changed in this particular regard so you should be able to just do what I did with it. You can also check the Optifine Docs on Github for more detailed instructions.

I mean... if you're asking me if you can just make a mod to do what you want then the answer is obviously "yes".
