So I'm trying to make a texture pack where the trident uses a 2D sprite like the other items but how do I actually make it so the pack does this?

You make the model use the parent "item/generated" or if you fully customize the display tag, then you only need "builtin/generated".

No, the item in your Hotbar and Inventory will look different, only the item held in your hand in first person, third person, and as an entity will not change.
