Assuming I'm understanding you correctly... the stone slab (half and top) and double both call the same texture: "stone_slab_side" for the side of both half and double.
It is possible to change the texture to something different for half and double (ie custom double slab textures) by adding a few .json files and new textures; I can provide the info as I do this in my pack.
If you literally mean change the models to something else...that may be more tricky- I've only ever altered to call different block types for custom textures.
As far as I know, the .json files for the models and blockstates already exist, so you just need to make sure your custom texture is in the textures>blocks folder, and that the block model .json points to it, likewise that the blockstate points to the right model .json files.
