This is one of those questions that makes me tilt my head a little bit. If you're looking for a "make good" button, there isn't one. Doing this requires actually knowing how to use your image editor and possibly even doing some art yourself to fill in the missing areas. "Porting" isn't always so easy as just dropping a file from one thing to the other, sometimes real work is required to get things to line up. Much of it can be done by moving pieces around, but for some of it you're going to have to just grab a 1px solid brush with no anti-aliasing and go to work.

What about changing the entity model itself? According to optifine you can change them? I would like only the profession of the default one to have a different model if possible.
I went ahead and updated the file you uploaded to the new format. All you have to do is rename it to the villager you want and replace it. No model editing required. No pixel quality was lost

The program I use was gimp, it's like a free version of photoshop. What I did is a little difficult to explain and may be confusing to a beginner like you. I could do some of the other ones for you depending on how many you have if you would like me to. You can attach the files in a reply. If you don't to do that I can attempt to explain what I did, but it may be confusing.

I am not a beginner. I would like you to please show me a video of what you did. I couldn't re-produce this for 32x32 zombie villager.
By the way with mcppatcher is there a way to get the dragon's breath particle color changed I have tried this in the color.properties. I also have the correct file names and correct path because, I changed the nether portal:

It seems I have the oposite problem now. I need to figure out how to back port some of them because, I don't want to play myself 1.9+ and have custom support for 1.8x already as microsoft's/mojang's formatting allowed it.
I really don't know what the older format is suppose to be. If they kept the suit for 1.8x zombie villagers in this texture pack or if they simply only made the head overlay like suggested in the above post(main)

Use this in your example here and I prefer pixel dimension numbers so I can re-produce them. I have about 10-15 more of these to do. Again a video would probably be easier for the both of us since you can talk it out or you could write the instructions via text.

So I converted them to the old style. The style of texture pack I am looking for is zombie_villager to newer format from the old format of having the zombie skin with the villager farmer head. Next I need to port them to a newer version for the newer model. They appear about 1/20 zombie villagers as it's a rare old variety that microsoft added in so people didn't feel left out and can still see the older format of the zombie villagers.

Here is what my attempt looked like
1.8 Good Port zombie_villager
Failed New Port(notice red on the back of the zombie villager) while that's noticeable I am sure there is pixelation differences
Found out the best way to do it may require manual work but the missing pixels will work 80% of the time for:
arm algorithm
expand arm copying first row over and expand the image one
expand arm 2d pixel by copying last row over to the last one
neck algorithm
last row moves to end
copy 2 mid rows to fill gaps
but algorithm
copy first row to first index
copy last row to last index
efill last two rows with middle two rows
