Warning! This hasn't been updated in a long time so be aware that some things have changed.
Since I've seen this asked a few times, I thought I'd go ahead and provide a list of -every- texture file in the game and what they are for. If I have missed anything, or you think I got something wrong, or you just want to heap praise upon my shoulders, go ahead and drop a reply.
kz.png - contains all of the painting art as well as the texture for the sides and back of paintings
(only the top left 16x square of the backing texture is used)
environment - contains particle effects for rain and snow as well as the cloud texture
clouds.png - the clouds in the sky. A fun easter egg is hiding shapes in them
rain.png - rain particles
snow.png - snow particles
font - contains the bitmap font for the game
default.png - the font used by the game.
gui - this folder contains all the various UI elements as well as the items and the background image
background.png - the background image that shows up in the game menu
container.png - The chest interface
crafting.png - The workbench interface
furnace.png - The furnace interface
gui.png - Contains the inventory bar, and the button backgrounds
icons.png - health, armor and air bubble icons also contains the crosshair
(Note, the crosshair actually inverts the color of things under it, changing it's color can have odd results)
inventory.png - the player inventory screen
items.png - all of the icons for the items in the game that are not blocks.
logo.png - Old logo (Not currently used, use the mclogo.png in the title folder instead)
particles.png - Apparently this is the 'poof' effect when you give dogs a bone. (Not to be confused with the heart particles from the particles.png at the top level that appear when you tame a dog.)
slot.png - icons used on the stat screen
trap.png - dispenser interface
unknown_pack.png - the icon used for packs without one in the pack selector screen
item - contains the textures for arrows, carts, boats, and signs
arrows.png - textures for arrows (The second arrow art doesn't appear to be used)
boat.png - the boat texture
cart.png - minecart texture
door.png - not used (The door texture is in the terrain.png file)
sign.png - sign texture The top is the sign with the front on the left and the bottom is the post.
misc - has various screen effects as well as the biome color files and the watch background
dial.png - the sun/moon background for the watch
(NOTE, due to a bug this texture will not be applied by the in-game picker)
Is this still broke or was it fixed with the biomes?
foliagecolor.png - the biome color mapping for tree leaves (Does not apply to pine trees or birch)

grasscolor.png - the biome color mapping for grass
(NOTE, due to a bug this texture will not be applied by the in-game picker) BUG FIXED!
watercolor.png - looks like a biome color map for water
( I don't know if this currently implemented or not. )
pumpkinblur.png - The screen overlay used when you have a pumpkin on your head
shadow.png - the shadow that shows up under items and such when they are in the world
vignette.png - overlay used when entering dark areas. (The image is inverted when applied to the game)
water.png - used for the underwater haze overlay
mapbg.png - the background image of the map used in the game
mapicons.png - icons used on the map
mob - contains all fo the creature textures as well as the default player texture
char.png - the default player texture
chicken.png
cow.png
creeper.png
ghast.png - normal ghast texture
ghast_fire.png - ghast texture used while it is shooting fireballs
pig.png - oink
pigman.png - not used by the game
pigzombie.png - zombiepigmen from the nether
saddle.png - saddle texture
sheep.png - The base (sheared) sheep texture
sheep_fur.png - the texture of the fluffy wool on an unsheared sheep
skeleton.png - wind chime texture >_>
slime.png - Slimes! (Yay they are back!)
spider.png - Base spider texture (What you see in the daytime)
spider_eyes.png - Nightime ovelay for the spider.
This just contains the eys but you can put the entire spider texture here for glow-in-the-dark spiders.
squid.png - inkwell
wolf.png - base wolf
wolf_angry.png - mad wolf
wolf_tame.png - tame wolf
zombie.png - durrrrr
terrain - contains the sun and the moon
moon.png - Note that there is no stars.png. Stars are generated procedurally by the game
sun.png
title - intro screen art
black.png - Used for the drop shadow behind the blocks that make up the word "Minecraft" on the title screen.
mojang.png - loading screen mojang logo
mclogo.png - The minecraft logo on the main screen
Not sure what your problem is with editing Doku's pack. Without information on what exactly you mean by 'it doesnt work' I can't really be much help. It could be anything from a badly structured .zip (Has to be the structure I described above) to something going wrong with the resolution. (I think Doku is 32x not the 16x the game supports natively)
You don't need to include any files you are not changing. Most texture packs out there only have the terrain.png file in the pack.
All of the .png files can be found in the minecraft.jar file in the same locations I gave. Use a program like 7-zip to extract them from the .jar

Pretty sure black.png is used as an overlay to darken the screen(usually when a GUI appears). If you open it in Photoshop or something you'll see it's actually like a 50% transparent black square, not an opaque one. So I believe it's used and stretched over the screen to darken it, thus you might be able to change the screen turns when you pause, or even erase it to have no dark screen.

From what I've seen, black.png is only used for the shadow under the minecraft title. (the Title uses the cobblestone texture from whatever pack is currently loaded.)

I can't seem to find them.

However, these don't show up on my terrain.png.

oops sorry, i meant like which group of pixels to to which 3d face. this is an example of what i'm looking for. this person made a map key for the mobs.
Ive been trying to get texture packs to work on my Mac and I just can't get any to work. Not even the ones (like Gerudoku) that everyone says work. I have been able to get a single pack (The EscapeCraft 3 pack by Fish that comes with the map) to work, but other than that, I can get absolutely none to work. What is going on here?
I wonder if I would have gotten an account on this forum if I wasn't failing at making my texture pack? Yeah probably.
Anyway, as you have gathered I'm having trouble with my texture pack.
Every one that I download works, but when I unzip a working file and re-zip it it doesn't, so I assume the problem is there.
I'm considering just handing off the files to someone who knows how to make it work, and have them compress it.
Any advice?
I'm using a MacBook if that makes any difference.

I was wondering how you get the lava and water bits to work. When I changed them in the pack, everything else I changed was different, but not that. Help?
