For example, you could make it so that one coal looked like one lump of coal, and 16 coal looked like slightly more coal, and 64 looked like a very large amount of coal.
If you use damage values, you could make a newly-crafted sword look brand-new, and a very damaged sword look almost broken.
I don't know how to do it, but it's definitely possible.
This can be done via MCPatcher's Custom Item Textures mod, but not in vanilla.
