I just installed the most recent version of Minecraft, then installed the most recent version of MCPatcher and am unable to get this texture pack to work. Should this pack work with Minecraft 1.8.1?

If the file you downloaded has "[1.8]" at the beginning it should work for 1.8.
This may sound like a dumb question, but did you select the resource pack in "Options... > Resource Packs..." from the title screen?
Also, it might be easier to install Optifine instead of using MCPatcher, I know it was for me at least... All you do is download the Optifine file and run it and Optifine is installed and it does all of the texture-work for you

I've just discovered something. Default realism is MUCH, MUCH satisfying than the Smooth version. I'm highly recommending to use Default realism version and i can't wait for the 1.7.10 / 1.8 updates !
That's how the new Hotbar and GUI looks. If your talking about how gritty the wood looks, increase your GUI scale to Auto. It makes your GUI match your monitor rez so everything looks a lot smoother then.
What kind of device do you need to run this on MCPE? O_O
