I'm thinking that it's some sort of Hoverbike with an AI installed in it so that it can move, and it uses tinned apples and water (are we for sure that the haybale will be water cans?) for "fuel" it also has a built in machine that can manafacture more bikes (hence breeding).

I was thinking the reason for water is so they don't over heat but still hover bikes seems odd to me but not out of the question

Disable connected textures? I belive that's the troubleshoot that people have used in the past.
During Orbital Industries's exploration of the moon, they were faced with a problem: A lack of a reliable scouting and transport vehicle. They needed something, something that can pass the bumpy surface of the moon,
Transport Carts are out of the question, since they have to lay down tracks and it needs to be continously maintained in the harsh surface of luna. And so they searched and searched until they re-discovered something that they had abandoned so that they can focus themselves to improve the current Huggatron: Hover Technology, the model was old, dating years before Mr.History sent Huggatrons to the public, it ran in a simple engine that can run on Organic matter or other chemical agents (notably iodine) and depends on water for coolant. They improved it by adding an AI that can navigate itself back to a designated outpost in case the user dies or it runs out of fuel, they also added a small machine that can create a smaller version of the Hover-bike
but needs sometime for it to regain the parts needed for usage (which needs the assistance of another Hoverbike and requires a lot of water). They also added a "Jump" module that enables it to pass obstacles without a problem, but then, the moon exploded, and "The Event" occured, they were never sent to the moon, and their unfinished AI caused them to go rouge and run-about unto the wastelands.

We found one of those old Hoverbikes running from us, it seems to be sentinent, since when one of my men
tried to ride it, it suddenly went berserk and thrown him off the seat, besides, he said that seat is "very uncomfortable" we had to put his legs on ice since the horse broke it when it thrown him off.
Day 40
While we where scavenging for food and water purifiers, we saw a lab that seems to be manufacturing Hall monitors, we looted the place before blowing it to
smithereens, we found and old Hoverbike seat, with an attached control system, looks like we should go find the Hoverbike again, cause I got a feeling we're gonna need it.
No, but the sound pack is preferred to increase immersion.

I did water container because wheat (the plant) is a water purifier.
Edit: I noticed several errors in the sides, so I fixed them!
I know that wheat is water I was just thinking as a lore explanation for why robots need water.
and i totaly second the idea of horses being hover-transport bots of some kind

A name for the Horse has not been created yet.
