I know it's not my game because other texture packs are working fine, but I cannot for the life of me find where the cursor is in the texture pack file. I have tried replacing it with what looks like the old cursor (in the top right of the gui.png file in the gui folder) but to no avail. Can anyone help?

The UI took a while to get used to though, I have to admit, but it's starting to grow on me.
Plus the very first screenshot actually inspired me in how I build my most reason base, so thanks for that too!

One thing though, I don't know how much control you have over the customizer, but I've noticed that a couple of textures are missing from it. Like boats, signs, sun/moon and others. Easily fixed by manually placing them there myself, but still.
