Im looking to use a particular texture pack but its only updated to 1.8. My question is, will everything have the new textures save for the items that the pack doesn't include? If so does the new content just keep the original textures? Or will it mess things up?

Any help is greatly appreciated.

If it is 1.8 then it is likely that something will not work. Textures like Netherbrick will appear as solid colors rather than an actual texture.
