On a Mac, at least, go to ~/Library/Application Support/minecraft/bin and rename 'minecraft.jar' to 'minecraft.jar.zip', then unzip it so you can see a folder. The textures are in a folder in there.

hadn't occured to me that being on a mac was important. well, that's what I get for trying to think.
